The story of Steakhouse
The American steakhouse concept has been exported to the rest of the world. In all major cities around the globe, including Copenhagen, you can find a steakhouse according to American tradition. However, America is still leading when it comes to the juicy steaks. Peter Luger Steakhouse, whose porterhouse is described as 'breathtaking', stands as a lighthouse that steakhouses in Copenhagen and the rest of the world navigate by.
The classic American steakhouse was imported to Denmark in 1971, when A Hereford Beefstouw opened its doors for the first time. However, it was Herning who could boast of having the first steakhouse, and not Copenhagen. The Danes quickly fell in love with the concept and not long after, the first steakhouse opened in Copenhagen.
The first to really get the steakhouse phenomenon out to the general population was the restaurant chain Jensens Bøfhus, which in the mid-80s delivered steaks to Copenhagen and the rest of the country. However, much has happened since the mid-80s opened their own interpretation of a steakhouse in Copenhagen and up through the 90s served steaks that were run through a frying machine and served to the masses, accompanied by questionable boat potatoes and ditto sauce.
In the middle of the zeros, the steakhouse experienced the start of a new golden age, when several established chefs in Copenhagen would once again be based on the classic American steakhouse.
Here again one would delve into the core of the classic virtues for which the steakhouses had originally been loved; get good dishes based on beef.
Central to the new golden age of steakhouses in Copenhagen is Michelin-starred chef Rasmus Oubæk, who with the opening of Restaurant Oubæk, which later became Rebel, helped to once again serve the trinity of meat, fritters and bearnaise in the highest quality for the Copenhagen meat lovers. Rebel is today part of the restaurant service Early Bird, just as Restaurant Oubæk was.
With Copenhagen's rediscovered love for the juicy steak, even more steakhouses are seeing the light of day. At the same time, more restaurateurs are trying to move in other directions than the classic American tradition. This has meant that several steakhouses in Copenhagen, which have their starting point in South America, have gained a foothold on the gastronomic scene.
