Caronte is owned by three Italians, one of whom, Felix Chamorro, has been recognized as one of the world's most influential sommeliers by Forbes Magazine. They also own Beviamo Winebar and Rufino Osteria, considered one of Copenhagen's best Italian pasta restaurants. They also run the wine import bar Roots, which supplies wine to some of Copenhagen's finest Michelin-starred restaurants.
This background is reflected in the restaurant's carefully selected wines, focusing heavily on Italy. Most of the wines are imported directly from some of Italy's most iconic winemakers. The same applies to Italian specialties, while local suppliers provide the ingredients.
