From Saigon to Copenhagen 

Behind Sàigòneer is Son Pham, who has moved from Saigon to Denmark. With a background as a chef for 6 years at the popular The Vietnamese in Copenhagen, he brings a lot of experience in flavor combinations and heartwarming cooking. 

Vietnam's history as a French colony has greatly influenced Vietnamese cuisine. The colonial period, added French dishes and eating habits to the existing Vietnamese cuisine. That is why today you still find classic French specialties in a fusion with Asian ingredients. 

Son Pham manages to combine Vietnamese food, French charcuterie and Danish ingredients. All based on the flavors he grew up with in his mother's kitchen in Vietnam. 

 

Heartwarming taste 

The menu at Sàigòneer embraces a wide variety of dishes from all over Vietnam. Here you will find fresh hand-rolled summer rolls in several variations depending on the season. Deep-fried spring rolls rolled in rice paper with juicy ingredients, and many other Vietnamese dishes with ingredients such as chili, soy and lemongrass, which give flavors as if you were actually in Vietnam. 

The dishes are prepared from scratch with warmth of heart and with respect for taking the time it takes to achieve the completely authentic taste. For example, the well-known Vietnamese Phở soup is made on a stock that simmers for more than 12 hours to achieve the correct taste. It is then served with noodles, fresh herbs, vegetables, red meat and chilli. The kitchen uses only the best fresh vegetables and quality meat in all the dishes. 

 

Like being in Vietnam 

In the central location on Øster Farimagsgade, Son Pham together with its staff creates the feeling of being in a Vietnamese home in the lively streets of Saigon. The Vietnamese tasting menu, along with specially developed and flavorful cocktails, completes the experience for the visiting guests. 

At the same time, Sàigòneer was created with a desire to spread joy and happiness. Their philosophical perspective is based on love, presence and sincerity between people.
